Chocolate Chunk Cookies and Thanksgiving, 2011

We had another great Thanksgiving this year.  We filled our bellies and finished off the night playing Twister and the Five Little Monkeys board game.  As usual, everyone got to pick a dish that they wanted for the meal - dinner or dessert, their choice.  And, my job is always to fill in the blank (usually the vegetable).  This year, JK picked chocolate chip cookies.  When I went shopping, I saw a stash of chocolate chunks, which I haven't seen for about ten years!  I pointed them out to him, and thankfully, he agreed to the chunk version, yay!  Cookies are usually my sweet downfall, rather than cakes or pies.  They are so easy to pick up, and in a few bites they are gone.  I've got to figure out how to get control of that.  Anyhow, I simply veganized the recipe on the bag by Bakers and reworded the directions to suit my taste.  They were delicioso.  Between all of us, about half made it to the Thanksgiving table.  Serves me right for making them early in the day.

Chocolate Chunk Cookies

Ingredients:

1 and 3/4 cup flour
3/4 tsp. baking soda
1/4 tsp. salt
3/4 cup vegan margarine, softened
1/2 cup vegan or raw sugar
1/2 cup brown sugar, packed
1/2 Tbs. EnerG Egg Replacer
2 Tbs. water
1 tsp. vanilla extract
1 pkg. chocolate chunks

Directions:

Preheat oven to 375 degrees.  In a medium bowl, whisk together the flour, baking soda and salt.  In a large bowl, cream together the margarine and sugars.  Add the Egg Replacer, water and vanilla extract, and beat on low speed until well mixed.  Add the flour mixture in two halves to the sugar mix, and continue blending until well mixed.  Stir in the chocolate chunks.  Take a heaping tablespoon of the cookie dough - I found I had to mold it into balls in  my hands - and place on an ungreased cookie sheet.  Bake for twelve minutes.  Cool for a couple minutes on cookie sheet on cooling rack, then place cookies directly on cooling rack to finish cooling.  Makes about three dozen.  Feeds five hungry vegans.

  1. This is great! I love the perspective on the shot of the cookies, but that hardly matter because the cookies look awesome.
    So nice that everyone gets to pick a dish. Waffle fries...good choice there.

  3. I love the idea that everyone gets to pick a dish! What a great way to get everyone involved and excited about the food. Thanksgiving sounds like so much fun, I can't wait for christmas now :)
    & those cookies look so good! I've found if I freeze the dough in portions it helps me... so I only bake what I'm happy to eat at once you know? regardless, indulging on the holidays is good for the soul, the rest of the year is for taking care of the body!
    Jackfruit is easy to find in the asian grocery stores near us (melbourne) and it's cheap as chips.. if you can't find it I'm sure you'd be able to access it online- just make sure you get the young green jackfruit not the sweet yellow one- although that is a perfect dessert and tastes wonderful frozen..mmmm

  5. You're fun that you let me all choose a dish. I'm too controlling on Thanksgiving. Chocolate chip cookies can be my downfall, too. We get those gf chunks now and love them. Happy Thanksgiving weekend!

  8. You know how we always say, 'My mouth was watering'? Well, my mouth literally DID water when I saw your spread! What a delicious meal! I love the fact that you supply the blank, 'usually the vegetable'! :) And those sweet things look so good! I use bars of chocolate which I beat the **** out of with a rolling pin, so my cookies are usually choc chunk as well. It makes for bigger bits of chocolate, so who's going to complain? :)
