Rustic Lentil Zucchini Soup
Ingredients:
8 cups of water
1 cup of lentils
2 Tbs. of homemade bouillon or one cube of store bought bouillon
5 zucchinis, chopped
1 - 28oz. can petite diced tomatoes
2 stalks of celery, sliced
1/2 cup of parsley, chopped
1 and 1/2 tsp. salt
1/2 tsp. pepper
1 and 1/2 tsp. garlic powder
1 tsp. onion powder
1 cup of pre-cooked brown rice
Directions:
Put the water and lentils in a large pot together on medium heat. Cook for 30 minutes, stirring occasionally. Add the remaining ingredients, except the rice, and continue cooking for another fifteen minutes or until the lentils are completely cooked and the veggies are tender. Add the rice and stir five minutes before serving. Great with a hunk of good bread and a side salad. Feeds five hungry vegans.
I love soups. Today i made Broccoli Cheese soup...it was delicious with my homemade wheat tortillas. It seems like I am antious for the Fall weather to arrive...I love the Fall and lots of homemade soups...yours was added to my soup recipe box...thank Blessedmama.

ReplyDeleteSounds delicious Blessedmama! I just bought an abundunce of zucchini from a local organic farm. They were huge zucc's, so I have to start coming up with recipe ideas too!

I love how chunky this looks...sounds yummy with all the lentil-tomato goodness. Lentils are great; so satisfying without being heavy.
ReplyDeleteIt's been awhile since I've made soup. My 2 youngest kiddos will rarely eat zucchini. :( I'm happy for you guys, that you are blessed with so much food at your fingertips.

Rose, I love chunky soup. It's also really hard for me to make soup without tomatoes, sometimes I do it, but it's rare!

I like soup year round, too. This sounds delicious and filling with rice and lentils. One day I hope to be a good enough gardener to have my own abundance of zucchini - one of my favorite vegetables.

ReplyDeleteLooks good! I love soup (particularly the chunky type), zucchini and lentils, and we also have a glut of zucchini/courgettes/marrows, so this is a soup I will make soon! I was thinking of using barley instead of rice...
