Home Fries

Are you familiar with the home fries that diners serve? The cubed potatoes that are crunchy on the outside but so fluffy on the inside? Well, after realizing that simply frying the taters in oil or water, or even baking them, didn't get me the results I wanted at home,I pulled out the deep fryer, and voila, perfect home fries! I like to make them for breakfast dishes, and they can be served by themselves as a side dish or incorporated into a dish like my Breakfast Potato Skillet. Yes, these do take some oil, but if you make these sparingly, you can leave your guilt outside the dining room.

Home Fries

Ingredients:

9 russet potatoes, peeled and cubed
Enough canola oil to reach a deep fryer's fill line
Salt to taste

Directions:

Pour the oil into your deep fryer and heat. When hot, carefully add three of the cubed russet potatoes. Cook for 14-15 minutes, until the potatoes are golden. Drain on paper towels and sprinkle with salt. Repeat with the rest of the potatoes in two more batches. Delicious and comforting. Feeds five hungry vegans.

  3. I don't own a deep fryer, so I'll have to come by your house for my home fries. :) You're probably better at making them than I would be anyway. So when should I be there?

  5. I love home fries!! Sweet potatoe home fries are great too. :o)
    About Maggie, yes she lost her eye. She had an ulcer to come up on her eye and by the time the specialist could see her it was too late. She ended up and had to loose it. It broke my heart so much to have to put her thru that. The first few days were so bad for her. I was so afraid that she wasn't going to be able to adjust, but after a week she was almost back to normal. She's a trooper! :o)

  6. I think a deep fryer is the key to many restaurant and diner foods. I think I just realized that my favorite veggie burger is fried!

    What a great looking plate, though, and those home fries just look perfect. Plus, the cantaloupe is almost half the plate!

    Jessica, unfortunately, I think you're right. But, I believe an occasional indulgence in oil won't do you in. And, yes, I really do try to have half my plate fruits or veggies, like a good girl!

  9. Guess I never had the stellar Potatoes that you experienced. Others miss Mac & Cheese. I just miss Pizza. Gave up trying to recreate it though.

  10. You're back! and I've just found out! I missed you, but now have enjoyed catcvhing up on your latest posts.

    Thank you for the left-over pasta ideas! We ALWAYS make too much... Now I can use it up before each piece develops a wee furry coat!

  11. S.V., I totally get what you're saying about pizza. But, (without trying to promote myself immodestly), I really like the crust I've made, and with or without vegan cheese, cruelty-free pizza tastes pretty good to me now! It took some adjusting at first, but now I'm very content. Now, I want to make some for you.

    Penny, hey, hey, here I am! Well, it wasn't my plan to be gone for so long, but unruly Blogger tried to get the best of me. But, thanks to some help, I've managed to get back on. Glad to help with the overabundance of pasta. Believe it or not, even with five hungry vegans over here, I can make too much too.

  14. Jenny, your first comment didn't post. I hate it when that happens. When we first got the deep fryer, I was making all sorts of succulent, oily dishes, but then I calmed down, and just it a couple of times a year. You're a strong woman - you could do it!
