Sweet Corn Muffins

I actually just veganized a recipe on the back of my cornmeal box to get these little muffin jewels. They are sweetened with sugar, so for my Arkansas-born husband, they don't qualify as true cornbread, but he accepts them as kid-friendly corn muffins. I make extra batches and freeze them for quick meal helpers.



Sweet Corn Muffins

Ingredients:

1 and 1/2 cups flour
2/3 cups vegan sugar
1/2 cup corn meal
1 Tbs. baking powder
1/2 tsp. salt
1 Tbs. EnerG Egg Replacer
4 Tbs. water
1 and 1/4 cups soy milk
1/3 cup canola oil
3 Tbs. vegan margarine, melted

Directions:

Preheat oven to 350 degrees. Either spray with Pam or lightly grease with margarine two cupcake/muffin pans. In a large bowl, whisk together the flour, sugar, corn meal, baking powder and salt. In a medium bowl whisk together the Egg Replacer and water. Add the remaining ingredients to that and whisk together again. Pour the wet ingredients into the bowl with the dry and stir until well blended. Spoon into muffin pans, filling each hole about 2/3 full. Bake for 20 minutes. Cool on wire rack. Makes about sixteen or so muffins. Feeds five hungry vegans. My children love these!

  1. These do look like golden jewels! It may not be "authentic", but this northern girl likes a bit of sugar in corn bread. I'd love to have some of these with some chili.

  2. Oh, Rose, with chili in this house, the cornbread would have to be unsweetened! If not, you'd never stop hearing a rant from a certain person, er, I mean, a reasonable disagreement from my love. :-)

  3. Corn muffins are such handy thing to have around ! One thing that we have used them for, in a pinch, is to put a spoonful of maple syrup or jam on them and cover with warm milk. A kind of sort of quickie different breakfast

  5. My family also had a sweet/unsweet division over cornbread. Only my grandmother would make sweet corn muffins and I loved them! Yours look really good; they are indeed golden jewels.

  8. The muffins are so cute and colorful. They look great, but to go with chili, I'd definitely have to make them with only a tiny amount of sweetener. So, I would just eat these for breakfast!

  14. These look very nice! I make sweetened corn muffins too, and we have them with chilli... But then, I put molasses in my chilli, too!

  15. I just made these tonight to go with chilli for dinner. I subbed 1 cup white whole wheat and in my rush to get them in the oven I accidentally left out the sugar completely! They were still delicious with dinner and my husband is eating one now with jam. So I would say you could easily change the sugar to suit your taste. Thanks for the recipe!

  20. Haha, I just did a google search for vegan corn muffins and found you!! I was thinking I had seen you make them before...I know I've seen you do cornbread, but wasn't sure whether corn bread and corn muffins could be used interchangeably.
