Big Soy Tostadas
Ingredients:
5 Del Oro Tostada Crowns (each box has four crowns)
1 Tbs. canola oil
2 pkgs. Smart Ground, Mexican Style (you can add beans or not)
Our toppings:
Romaine lettuce
Sliced black olives
Finely grated vegan cheese - we used Vegan Gourmet, Cheddar Style
Toffuti Better than Sour Cream
Your favorite salsa - we used Herdez medium
Diced tomatoes
Directions:
Preheat the tostada crowns according to package directions. In a medium skillet, heat the oil. Add the Smart Ground and cook until heated through and slightly browned, about five minutes. When the crowns come out of the oven, scoop some of the Smart Ground onto its bottom and then add the rest of the ingredients. Chew, swallow, smile. Feeds five hungry vegans.
A Tostada is like a snowflake. No two are alike. We usually do Refried Beans in place of the Smart Ground.
ReplyDeletewhen i drove across the country i did a "tostada tour" lol i was a baby vegan and it was such and easy thing to make vegan at any restaurant you stopped at.since i was heading west....it got easier and easier to find places other than del taco to buy them! this just brings back memories:) and you are right, do it yourself meals are the best!

ReplyDeleteI also love those comfort foods that just punchures your soul with goodness in every bite. This looks so good I was drooling just reading along. I came across today in the organic vegan section of our grocery store with a new food I had never seen before. This was Gardein BBQ Skewers (4 in a pk), they are vegan meatless beef tips, so I bought 1 package to try them. Well!!!! I felt I had gone to heaven and back...these bbq beef look a like's were even better than the real thing. Two skewers has 19 grams of protein and the taste was to die for. So tomorrow I am going back to get at least 10 packages. I love these great foods that really hits the heart of the stomach and your tostada is a true favorite in that level...good job.

ReplyDeleteWe used to eat bean tostadas all the time. That photo and recipe makes me want to start again. We used to use Little Bear tostada shells. Mmmmmm.

Oh man, I have been craving Mexican lately! There are definitely days that I badly wish for vegan friends near me so that we can make and enjoy the same food together.
