Classic Tomato Sandwich, untoasted
Classic Tomato Sandwich, Toasted...or Not
Ingredients:
A ripe, red tomato, sliced thickly
Vegenaise
Good bread that can stand up to a wet ingredient - we used sourdough
Salt and pepper to taste
Directions:
If you are doing the toasted version, toast your bread slices until they are light golden brown. If not, just continue from this point. :-) Spread a generous layer of Vegenaise on both slices of bread. Top one slice with tomato slices. Sprinkle with salt and pepper to your liking. Top with the other slice. Bite. Is good with chips or baby carrots or pickle spears on the side. Use a couple of more tomatoes to feed five hungry vegans.

Tomatoes and bread are so perfect together...think of all the variations: pasta, pizza etc...this sandwich is in great company for sure. Add wine, and you have a perfect trinity...in my book anyway.

What a simple and delicious idea for tomorrow's lunch! I have a vine-ripened hot house tomato here that I now know will go into a sandwich. I agree with Don that *vegan* bacon would also be good in the sandwich.

ReplyDeleteI'll never forget the first time I had a fresh, garden-grown tomato. Wow! There was barely any resemblance to supermarket tomatoes.

I use tomatoes in sandwiches often, but have never thought of having them stand alone. An idea I must try! :)
