Hint of India Garbanzos

This was one of those dishes where I was really craving curried garbanzos but didn't have any curry on hand. So, I kind of pushed that aside and decided to get more creative with the spices I already had in my cupboard, especially my poor neglected, underused garam masala. What turned out was a dish a bit on the spicy side but very tasty, definitely deserving of a reappearance.

Hint of India Garbanzos

Ingredients:

2 - 15oz. cans of garbanzo beans, undrained
1 yellow bell pepper, diced small
5 garlic cloves, chopped small
1/2 red onion, diced small
2 tsp. garam masala
1 Tbs. garlic powder
1 tsp. salt
1/4 tsp. black pepper

Directions:

Put all of the ingredients in a medium pot over medium heat. Bring to a boil and let boil for five minutes. Lower heat to medium low and continue cooking for 20 more minutes. Complete your meal by serving it over brown rice with steamed veggies on the side. Feeds five hungry vegans.

  1. I'm married to an Indian - so garbanzo beans with Indian flavors always sounds wonderful around here! I noticed there was no chili pepper - I'll have to make this when I'm protesting another spicy Indian meal!

  3. I like the name of the dish! Indian is always a challenge for me...I'll have to try this...all that garlic, yum! It's such a pretty bright color too, it's lovely on the plate with the other goodies.

  4. Hi, Jesse, you're right - there's a lot of chili peppers in Indian food! No, but I didn't have any one hand. Still, I'm the only in the house who can handle terribly hot food. Hopefully, this dish will be kind to you and your tastebuds. :-)

    FF, I go through curry like crazy, maybe two or three jars a year. So, it was a surprise when I didn't have one in my cupboard. Give it a try!

  9. I am all for using what's in the cupboard. Wonderful that this turned out well! I think the mix sounds wonderful. I'm glad you didn't run out of garlic ;)
    When in doubt, I just smell my spices and see what I think will fit.

    Jessica, yes, so much of our tasting comes from smell. And, I hope I never have to experience that dreadful day of when I have no garlic!
