Sauteed Dino Kale with Criminis and Tomatoes

I have a love affair with kale. The only greens I grew up eating were iceberg lettuce and canned spinach, so when I first tried greens, it was tentatively. I didn't really like them at first because I thought they were bitter, and some are still harder for me to eat, like mustard greens, but I'm friends with most greens now. But, when I tried kale, I couldn't believe it! It was love at first sight: I loved chewing it, and it loved being digested by me. I've been growing kale now for a couple of years and try to incorporate it and other greens into as many different meals as I can for my children. They are so darn healthy for us! But, my kale plants are not lush right now, so I bought some fresh dino kale from the store and made a super simple veggie medley. I used that ultra-delicious garlic blend from Gilroy again, so you can use garlic powder or another blend, if you wish.

For those that have been wondering about the Blessings Question of the Day that I promised in my 100th post, I did do a couple, but it's on hold for right now. Apparently, I didn't pass the idea through to the Blessings before I announced it on my blog. I already mortify my girls on a daily basis just by being their mom. They think I'm too friendly to strangers: in the store I smile at people, horrors! I'll help someone randomly if they appear to need help, how could I?! I'll chat up someone in line if they seem receptive, oh, Mom, stop! So, as you can see, I've gotten myself in hot water with them with my little question of the day idea. Suffice it to say that most of the girls' questions were how I would rather be trampled by one animal or another, escape from death-defying situations, what body part or sense I would rather be without, etc. JK's were faves from colors to animals to foods to wrestlers, etc. Sigh. If things change, I'll let you know. Thanks to those who briefly played along!




Sauteed Dino Kale with Criminis and Tomatoes

Ingredients:

2 Tbs. olive oil
3 cups of crimini mushrooms, sliced
10 cups of dino kale, stripped from their stems, and either coarsely chopped or torn into bite-sized pieces
2 tsp. good garlic blend or garlic powder
salt and pepper to taste
2 tomatoes, halved and halved and again, and cut into "mini" wedges

Directions:

Heat olive oil in a large pan over medium heat. Add the mushrooms and cook for five minutes, stirring occasionally. Add the kale in big handfuls, stirring for a few seconds to slightly wilt kale before adding next big handful. Add the spices. Cook for another three to five minutes, until kale is evenly bright green and slightly wilted but not overcooked. Add the tomatoes and stir until well mixed. Serve and eat immediately. Feeds five hungry vegans. Yum!

  1. I feel the same way you do about kale — the perfect vegetable! It's great by itself and it mixes easily with others, just like you! :D I could dig right into that gorgeous plate of kale right now.

    My children were mortified by my behavior, too, but the truth is they'd also be mortified if you weren't friendly and helpful to strangers. I've been accused of talking too much to a girlfriend brought home for me to meet, then when I tried to modify my behavior, I was accused of being unfriendly and mean! Sigh.

  2. This is strange but after 10 years as a vegan, I have never tasted Kale. I am going to try this recipe and I'll let you know what I think of the kale taste...Hugs.

  3. Oh dear, I bet it's difficult with kids...just as well I don't have any, I'd probably be embarassing them left, right and center!

    The kale look so tasty; I love tomatoes sauteed like that, I think I'll make some of this tonight.

  4. my mom heard this type of thing too..she wsnt "allowed" to say certain words etc....like Andrea said, i have a feeling that they would be MORE upset if you werent nice.
    haha i used to ask my mom all sorts of questions like that before. like the senses thing? she would say she could go without eyesight..i was always blown away by that and would argue with her:)lol

  5. This recipe sounds and looks wonderful! I have a love affair with kale too. My grandpa used to grow it when we were kids and my grandma used to make these delicious German kale dishes for us. So yummy! I love finding new kale recipes, thank you for sharing yours! I'm going to add it to my recipe collection :D

  6. It was so long before I tried kale, too, and now I like it. I think it's my favorite green. Maybe one day I'll grow my own, too. Your recipe looks good. I love my kale with lots of garlic, and mushrooms sound like a great addition.

    Do your kids read your blog? The questions shouldn't embarrass them, especially if you're recognizing them as worthwhile questions by asking a larger audience, but I can see how they would take that the wrong way. I used to get annoyed when my mom would talk about me with her co-workers -- at least your little blessings probably won't ever meet us!

  8. Ha ha, Andrea, I know what you mean! It must be an age-related thing. Hopefully, they'll grow out of it and think I'm hysterical and wonderful once again like they did when they were JK's age!

    Rose, the only thing that would be embarrassing about you is the time it takes you to wash just a few cups! Sheesh!

    Michelle, I don't want to answer those kinds of questions because I wonder if someday it will come true! Yipes!

    Maggie, you must share some German kale recipes! My grandmother was full-blooded German, but she never cooked with kale, so it would be wonderful to see some.

  13. "So far" only my 5 year old gets embarrassed. He is super self-conscious and frequently hisses, "Stop!" in public to the rest of us. He totally inherited my self-consciousness. I'm crossing my fingers that the other two don't seem to have it. They get more embarrassed by the stuff I post on my other blog, and sometimes I try to hide pictures and quotes I included from them. But sometimes I ask permission first. :)

    Mushrooms and tomatoes seem like the perfect combo with kale.

    Jenny, I wish you the best of luck. When mine were little (the girls), they were never embarrassed by me. JK still thinks I'm the greatest! But, it came with age for the girls, so now they basically endure me in public. :-)

  15. Yummy...that looks delish! When I first tried Kale I didn't like it, but it's my fav now. I kept making myself eat it in hopes that I would learn to like it, and it worked. :o)

    Is kale hard to grow? I'm trying to figure out what veggies I want to grow this year. I would love to try to grow some kale.

  16. Kale seems pretty easy to grow here. I don't know how it would do in a colder climate. Right now, ours still seem to be coming out of a dormant state due to Winter and the frost. Soon, they should be lush again.
