This salad is perfect for a hot summer day. I got the beets at the Farmer's Market, and they were deeeelicoius!
Green Salad with Golden Beets and Raw Pumpkin Seeds
Ingredients:
1 head Romaine lettuce, chopped
8 small or 4 medium to large golden beets
1 - 15oz. can garbanzo beans, drained
2 green onions, sliced
1/2 cup raw pumpkin seeds
Directions:
Peel and quarter the beets, and boil for ten minutes. Rinse under cold water, and slice into bite-sized pieces. Add the lettuce, beets and rest of the ingredients into a large serving bowl. Add your favorite vegan salad dressing. Feeds five hungry vegans. Simple and scrumptious!

Such pretty golden beets! I thought they were sauteed squash at first.

DeleteI love golden beetroots - as much for the beautiful colour as much as the taste! And pumpkin seeds are one of my favourite salad toppers, especially dry fried til they pop!

DeleteI recently found some yellow beets at the organic market. They are so delicious in salads. I've dressed them with a little apple cider vinegar, maply syrup and chipotle powder. I hope I can find more of them next time.

DeleteThis looks amazing! I've very new to the beet game and have not tried golden beets but I've heard they have a less "earthy" flavor going on? I would love to make this a roasted beet salad in the fall too!
